I recently celebrated a birthday, and I was so excited that I got to have cake! Now, you may be thinking, ‘of course you had cake, that’s the best part of the birthday!’, but for those of us with Celiac Disease or Gluten Intolerance, having that special treat isn’t always so easy.
While there are specialty bakeries that bake cakes without gluten, many of us either don’t live close enough to one, or don’t want to pay the high prices. So, where does that leave us? Making our own cakes, of course!
You can either start from scratch, or you can buy a gluten free cake mix. Betty Crocker has a line of boxed gluten free dessert mixes and they have some really great recipes for specialty cakes using the box mix. Other brands such as Bob’s Red Mill, Kinnikinnick, Really Great Food and King Arthur Flour have great cake mixes and flours that you can either prepare as suggested, or modify to make it extra special!
I love carrot cake, so for my birthday my mom purchased the Betty Crocker Gluten Free Cake mix and followed the recipe on the Betty Crocker website. The mix does cost a little more than their regular mix, but it is well worth it! They also have a Devil’s Food cake mix, Brownie Mix, and Chocolate Chip Cookie Mix. The carrot cake with homemade cream cheese frosting turned out great! My brother didn’t even believe that it was gluten free.
My dad’s birthday is coming up in October, and while he can eat gluten with no problems, for my sake we’ll be having a gluten free cake. His favorite is Pineapple Upside Down Cake, and we make it for him every year. This year I will be making him a gluten free version with the Pineapple Cake Mix from Really Great Food and I know it will taste great. I’m excited that even though it won’t be my special day, I still get to have some cake!
Most of the large chain grocery stores carry at least one brand of gluten free cake mixes. If you can’t find any at your local grocery store or you want a better selection, check out the mixes available at GlutenFree.com. They have many different vendors so you can bet you’ll find you’re favorite.
Living with Celiac Disease or Gluten Intolerance often means we have to make some sacrifices. Thankfully, we have some great options that let us have that traditional birthday fun!
